You might already know that Delta (Δ) is the uppercase 4th letter of the Greek alphabet – a triangle with three sides in perfect harmony. Well, inspired by the letter, Delta is also the name of Athens’ latest fine-dining restaurant, which aims to become a landmark culinary destination that spreads the word of Greek fine dining around the world.
Located at the Stavros Niarchos Foundation Cultural Center (a modern cultural gem of Athens that also houses the National Opera House and National Library), Delta follows a “nothing lost—nothing wasted” philosophy that respects natural resources while raising public consciousness around the importance of sustainability and foodways. In doing so, it has developed collaborations with small producers from all over Greece, focusing on original and uncommon ingredients, and with an emphasis on organic products.
Each menu consists of 17 courses, created by two head chefs – George Papazacharias (previously Head Chef at Maaemo and Under, in Norway) and Thanos Feskos (previously Assistant Head Chef at Geranium, a 3 Michelin-starred restaurant in Denmark).
The goal is “minimalistic perfection, utilization of local raw materials, a focus on small-scale producers” in a “creative, philosophical and gastronomic experience” centring on intense and bold flavours through innovative techniques such as fermentation and Scandinavian preservation.
The restaurant also hosts food and wine-tasting seminars, as well as educational programs, activities, and workshops, promoting concepts of sustainability and the responsible management of natural resources.
Delta was created through an initiative and a grant by the Stavros Niarchos Foundation (SNF).
